We’ve actively chosen to grow our most valuable ingredient – basil – in a UK-based vertical farm. We sat down to chat with James, the founder of the Jones Food Company (which grows our basil) and Romy, who works in produce sales for the company, to understand more about vertical farms, what their benefits are, and how they can genuinely change the efficacy and quality of an ingredient.
